Who doesn’t love Zucchini bread, and when it’s zucchini season, it is the fastest way to use up the goods!
Ingredients
4 cups grated Zucchini (the Ninja Food Processor on my favorite things is a great way to quickly dick up the zucchini)
3 large eggs
3 cups All-Purpose Flour
1/2 tsp baking powder
2tsp baking soda
2 tsp cinnamon
2 Tbsp cinnamon sugar
1/4 tsp of nutmeg
1/2 tsp salt
1 cup canola oil
1/2 cup sour cream
Optional: 1 tsp pumpkin pie spice
Instructions:
Preheat oven to 350
Get two bowls (large and medium would work)
In the large bowl, combine the flour, baking soda, baking powder, salt, and spices
In the second bowl, use a fork or whisk to combine the oil and sugar; once combined add in eggs, and sour cream and again whisk with fork or whisk
Now add the grated/shredded zucchini to the wet mix and combine with a wooden spoon
*Zucchini is packed with moisture, depending on your zucchini you may want to pat dry with a paper towel before combining mix
Slowly add dry ingredient mixture into wet ingredients and keep using wooden spoon to combine
Pour into bread pan *i spray my pans with Pam Baking Spray or use the reusable baking sheets to prevent bread from sticking to the pans
Cover the top of your loaf with the cinnamon sugar mixture and bake between 40-50 minutes depending on your oven
Bread is done when you can slide a knife or toothpick into the center and no dough comes out
Take bread out of pans and enjoy!
